对我国西部地区2803份食用豆资源品质进行了标准化鉴定,结果表明,6种主要食用豆中蛋白质含量以蚕豆最高,平均值为26.56%;豇豆次之(25.45%);菜豆偏低(22.32%)。总淀粉含量小豆最高(53.83%);绿豆次之(51.65%);豇豆和菜豆偏低(47%~48%)。各省资源中,产量最大的蚕豆和豌豆,蛋白质含量最高的均属四川品种,分别达29%和27%以上;青海和云南蚕豆总淀粉较高,达46%以上,云南豌豆淀粉最高,为53%。筛选出西部地区高蛋白优质资源93份,高淀粉优质资源88份
The quality of 2803 food beans in western China was standardized and the results showed that the content of protein in the six kinds of food beans was the highest with the average of 26.56%; the cowpea was the second (25.45%); Low (22.32%). The highest content of total starch was adzuki bean (53.83%), followed by mung bean (51.65%), low cowpea and kidney bean (47% -48%). Among the resources of the provinces, the highest yield of faba bean and pea, the highest protein content were all Sichuan varieties, which reached 29% and 27% respectively; the total starch of Qinghai and Yunnan faba was higher than 46%, Yunnan pea starch had the highest content of 53 %. 93 high-quality protein resources in western China were screened, and 88 high-quality starch resources were screened out
