不久前,“首都保健营养美食学会”邀请科技界、医学界、饮食界的部分老专家在京华食苑举办了“名人谈营养”研讨会,专家们就当前人们在饮食与健康方面的一些认识问题与消费热点坦诚直言各自观点,从不同视角研讨了营养与健康问题。北京中医药大学中医营养教研室主任翁维健教授的发言,从较深的文化层次和营养学角度谈了一些对中国菜肴的看法,我们特选登他的发言,以飨烹者、食者。
