福尔马林为36～40％甲醛水溶液，刺激性强，常用于消毒房屋、衣物、家具、器械和防腐保存尸体。甲醛具有一般性原浆毒，损害中枢神经系统。内服可引起呕吐、腹泻等。因此，严禁用福尔马林浸泡食物或作食物的防腐剂。但目前，一些不法商贩只图赚钱，不讲道德，掺用福尔马林等有毒物质制作或发毛肚、鸭肠，严重违反食品卫生法。为了正确判断是否掺用福尔马林，本文介绍乙酰丙酮法测定甲醛，最低检测量为0.5μg。
