综述了几年来国内铁强化酱油中乙二胺四乙酸铁钠的检测方法。科学评价了分光光度法、原子吸收法、极谱法、毛细管区带电泳法、高效液相色谱法、样品背景颜色的校正以及测定结果的卫生学意义。
The detection methods of iron (II) EDTA in domestic iron fortified soy sauce in recent years are summarized. Scientific evaluation spectrophotometry, atomic absorption spectrometry, polarography, capillary zone electrophoresis, high performance liquid chromatography, sample background color correction and the determination of the significance of hygiene.
