采用高效液相色谱法(HPLC)对番茄中维生素C(Vc)含量进行分析。以0.3%的草酸水溶液为流动相,流速1.0 m L/min,柱温30℃,检测波长244 nm,方法的变异系数为1.115%,回收率为97.60%~100.3%,线性范围为0~0.5 mg/m L。采用流动注射化学发光法,对番茄抗氧化性进行测定,结果表明:番茄能有效的抑制超氧阴离子自由基诱导的鲁米诺化学发光,随着发光体系中番茄含量的升高,发光强度呈下降趋势即具有较强的抗氧化性能。番茄中维生素C含量与抗氧化性呈正比例变化。
The content of vitamin C (Vc) in tomato was analyzed by high performance liquid chromatography (HPLC). The linear range was from 0 to 0.5 with 0.3% aqueous oxalic acid as mobile phase at a flow rate of 1.0 mL / min and a column temperature of 30 ℃ with a detection wavelength at 244 nm.
