原理:嗜热乳酸链球菌在品质正常的牛奶中会进行发酵反应,产生酸性物质并使牛奶变为凝固状态(即乳酸菌奶)。若牛奶中含有抗生素,会抑制乳酸链球菌的生长和繁殖,牛奶则不会呈凝固状。
Principle: Streptococcus thermophilus in the normal quality of milk will be fermented reaction to produce acidic substances and make milk into a solidified state (ie lactic acid bacteria milk). If the milk contains antibiotics, will inhibit the growth and reproduction of Streptococcus nisin, milk will not be solidified.
