目的考察大豆异黄酮的抗氧化能力。方法通过二苯代苦味酰基自由基清除实验,羟基自由基清除实验以及抗亚油酸过氧化等实验,测定和对比大豆异黄酮、维生素C和芦丁的抗氧化能力。结果大豆异黄酮对上述自由基均有清除作用,对羟基自由基的清除效果比芦丁好。结论大豆异黄酮是良好的.0H清除剂。
Objective To investigate the antioxidant capacity of soybean isoflavones. Methods The antioxidant activity of soy isoflavones, vitamin C and rutin were determined and compared by the experiments of diphenyl-picroic acyl radical scavenging, hydroxyl radical scavenging and anti-linoleic acid peroxidation. Results Soybean isoflavones had scavenging effects on the above free radicals, and had better scavenging effect on hydroxyl free radicals than rutin. Conclusion Soy isoflavones are good .0H scavengers.
