酒有它自己的身世,自己的祖宗。明人冯时化著《酒史》,曰:“酒自仪狄、杜康始。”主要指明了酒在传说中的创制功臣,把仪、杜两位古人奉为酒的始祖。酒的生产应该很早,早在汉代就有“酒榷”之说。《黄帝内经·素问》云:“以酒为浆。”———说明酒的历史特别悠久。至于《吕氏春秋》和《战国策》等著作,则已明确地说酒于夏禹时期就被酿制了。
