一、前言福建安溪是乌龙茶的著名产区,以出产“铁观音”闻名国内外。为了总结安溪茶农采制乌龙茶的独特技术经验,我所于1961年春、夏茶(四月中旬至七月中旬)期间组织了调查组深入安溪茶区各主产社队(晃阳、太平、南田、珊屏等)调查访问。并驻点西坪公社松岩大队半岭村初制所,进行了以铁观音、奇兰、梅占、乌龙四个茶树品种为主的原料采摘和初制过程的综合性观察记录,并结合进行各过程的含水率和细胞破碎率以及鲜叶、摇青叶、毛茶的主要内含物的初步测定工作,特写成本报告供作研究和参考。
