目前,从食药用真菌中分离到多种生理活性物质,如蛋白质、多肽、多糖及萜类等,具有免疫调节、抗肿瘤、降血脂及抗氧化等生物学功能。生物活性肽指对生物机体的生命活动有益或具有生理作用的肽类化合物。食药用真菌蛋白质资源丰富,生物活性肽的开发利用前景广阔。现综述了食药用真菌生物活性肽的制备研究进展,以期为其进一步研究和开发利用提供参考。
At present, a variety of physiologically active substances, such as proteins, peptides, polysaccharides and terpenoids, are isolated from edible medicinal fungi and have biological functions of immunomodulation, antitumor, hypolipidemic and anti-oxidation. Bioactive peptide refers to the biological activity of biological activity beneficial or physiological role of peptide compounds. Food and medicinal fungi rich in protein, bio-active peptide development and utilization of a bright future. Now reviewed the preparation of edible fungi bioactive peptides research progress, in order to provide a reference for further research and development.
