何谓食剪?通俗地说,食剪类似食雕和剪纸。从用途上来看,它跟食雕一样,也是服务于餐桌,用来装点盘面、美化菜肴;从操作技法上看,它又与民间的剪纸艺术非常相似,因而有人甚至把它看作是剪纸艺术的演变。它具有经济、实用、视觉效果极佳等优点。但遗憾的是由于其制作方法尚未普及,很多厨师至今仍对此一知半解甚至毫无了解,致使食剪作品很难跟餐桌结缘。食剪作品自身的优越性决定了它必将有着良好的应用前景。那么怎样才能制作出一幅好的食剪作品?在实际操作过程中又该
