通过研究(+)—儿茶素(Cc)与3种金属离子(Cr(Ⅲ)、Al(Ⅲ)和Cu(Ⅱ))形成的配合物—鞣性模块(TM)与胶原蛋白作用,讨论了TM对鞣后胶原蛋白耐热稳定性的影响。结果证明:2种物质形成TM后与胶原蛋白作用,使鞣后胶原蛋白的耐热稳定性高于两者直接进入胶原蛋白作用后的耐热稳定性,并且TM稳定常数越高,使鞣后胶原蛋白的耐热稳定性提高越多,为提高鞣后胶原蛋白耐热稳定性提供了有效途径。
By studying the effect of the tanning moiety (TM), a complex of (+) - catechin (Cc) with three metal ions (Cr (Ⅲ), Al (Ⅲ) and Cu (Ⅱ)) on collagen, Effect of TM on Heat-resistant Stability of Tanned Collagen.
