油脂、蛋白质和碳水化合物是人类最基本的三大食物。吃什么油好?过去,人们往往根据家人的口味、饮食习惯来决定吃什么油,这是无可厚非的。随着科学技术的进步,关于油酸、亚油酸、亚麻酸对人体影响的认识逐渐深化和清晰起来,这就为人们从营养、保健的角度来选择吃什么油提供了参考坐标。20世纪60年代,一项涉及到希腊、意大利、芬兰、南斯拉夫、日本、美国等国12000人的关于膳食与健康的调查发现,在10万人中因心脑血管疾病死亡的人数,美国为466人,而希腊仅48人。换言之,希腊人的心脑血管疾病发生致死率比美国低90%。
