血清蛋白的成分与结构,反映了生物机体的本质,与人体疾病的引起常常有着密切关系。而处于蛋白结构中的硫元素,往往是个很重要的因素。这一方面是因为二硫键和巯基的形成与破坏将直接影响着蛋白的生物活性,另一方面是因为二硫键和巯基在蛋白质中又正是处于最易发生化学反应的地位,极易受到环境致癌物质和一些有毒元素的侵袭,从而诱发机体产生癌变的可能性,这就引起了人们对于研究和测定血清蛋白中的硫的兴趣
The composition and structure of serum protein, reflecting the nature of the biological body, is often closely related to the disease caused by the human body. The sulfur element in the protein structure is often a very important factor. This is partly because the formation and destruction of disulfide bonds and sulfhydryl groups will directly affect the biological activity of the protein. On the other hand, disulfide bonds and sulfhydryl groups are in the most vulnerable place for chemical reactions in protein. By the environmental carcinogens and some of the toxic elements of the invasion, thus inducing the possibility of body cancer, which led to people for the study and determination of serum protein in the interest of sulfur
