成熟时采摘在果实发育早期缺水或不缺水的油梨,贮藏在5.5℃下30天后,由于缺水和限制贮运库通风的相互作用,果实有变褐的可能性。本文用多酚氧化酶的活性来证实。把已熟的果放在限制通风的库内贮藏48小时,采自缺水树的果实可溶性多酚氧化酶活性增加。而采自常规灌溉(不缺水)树果实的没有增加。总多酚氧化酶相似而没有重大差异。由此可得结论:限制通风引起束缚多酚氧化酶的释放。推测在限制通风的条件下,对于表皮破损的果,缺水逆境导致果实变褐的可能性较大。
