鲫鱼营养丰富、肉味鲜美,深受消费者的青睐。鲫鱼为广布、广适性鱼类,分布在亚寒带至亚热带。在我国除青藏高原和新疆北部没有天然分布外,全国各地均有出产。由于各地鲫鱼长期地生态适应,使之形成了许多变异,不仅形体上出现各种不同,在其营养成分方面也有一定差别。目前,我国已开发的野生鲫鱼品种不下十多种,诸如:内蒙古黄旗海出产的官村鲫、黑龙江方正县出产的方正鲫、新疆额尔齐斯河出产的银鲫、江西彭泽县出产的彭泽鲫、江苏六合出产的龙池鲫,
