用HPLC法测定商丘市森林公园几种食用蚂蚁氨基酸含量,筛选出优质种类。在商丘市森林公园捕获的可食用蚂蚁中选出数量较多的4个种,采用HPLC法测定它们的氨基酸含量(色氨酸采用荧光分光光度计测定)。结果表明:4种蚂蚁的氨基酸含量和必需氨基酸含量均较高,通过综合分析,得出拟黑多刺蚁(Polyrhachis vicina Roger)品质较好。该研究结果为蚂蚁食品的开发和研制工作提供了科学依据。
HPLC method was used to determine the amino acid content of several edible ants in Shangqiu Forest Park to screen out high quality species. A large number of edible ants were collected from Shangqiu Forest Park to select four species, and their amino acid contents were determined by HPLC (tryptophan was measured by fluorescence spectrophotometer). The results showed that the four kinds of ants had high amino acid content and essential amino acid content. Through comprehensive analysis, the results showed that Polyrhachis vicina Roger had better quality. The results provide a scientific basis for the development and research of ant food.
