目的了解2013年甘肃省民乐县饮食餐馆餐饮具消毒情况,为提高消毒质量提供科学依据。方法采取随机抽样的方法抽取本县349家餐饮单位的978件餐具样品,用专用大肠菌群快速检测纸片进行检测。结果民乐县集中式消毒饮食餐馆消毒合格率98.72%,自行消毒饮食餐馆消毒合格率60.22%,消毒方式的不同消毒效果差异有统计学意义(χ2=87.05,P<0.05);学校食堂餐饮具消毒合格率86.27%,社会饮食餐馆餐饮具消毒合格率64.04%,二者消毒效果合格率差异有统计学意义(χ2=20.23,P<0.05);大型餐馆消毒合格率90.00%,中型餐馆消毒合格率71.43%,小型餐馆消毒合格率64.53%,消毒效果合格率差异有统计学意义(χ2=12.54,P<0.05)。结论 2013年民乐县饮食餐馆餐饮具消毒合格率与往年相比有很大的提高,尤其是集中消毒的效果明显,但消毒总体合格率仍然偏低,加大督查力度、提高餐饮具的消毒合格率,将是民乐县今后监测工作的重点。
Objective To understand the disinfection of tableware in Minle County, Gansu Province in 2013 and provide a scientific basis for improving the quality of disinfection. Methods A total of 978 tableware samples from 349 catering establishments in our county were collected by random sampling method and detected with special coliform bacteria rapid test paper. Results The disinfection rate of centralized disinfection catering restaurant in Minle County was 98.72%, the disinfection rate of self-disinfection restaurant was 60.22%, the disinfection effect of disinfection method was statistically significant (χ2 = 87.05, P <0.05); the school canteen disinfection Pass rate of 86.27%, social eating and drinking tableware disinfection pass rate of 64.04%, the two disinfection effect pass rate difference was statistically significant (χ2 = 20.23, P <0.05); large restaurant disinfection pass rate of 90.00%, medium-sized restaurant disinfection pass rate 71.43%, small restaurant disinfection pass rate was 64.53%, disinfection effect pass rate difference was statistically significant (χ2 = 12.54, P <0.05). Conclusion In 2013, the qualified rate of tableware disinfection in Minle County restaurants has been greatly improved compared with that in previous years. In particular, the effect of concentrated disinfection is obvious. However, the overall pass rate of disinfection is still relatively low. Supervision is intensified to improve the disinfection of tableware The passing rate will be the focus of the future monitoring of Minle County.
