近几年来,璧山县农村里的一些农民,利用柴灶烧火煮饭的炊烟熏贮红苕种,效果十分显著。据对1,988户的不完全统计,用烟熏贮苕种140,163公斤,其中出种对的好苕有133,154公斤,占95%。当地农民是在习惯把脚板苕、火葱、大蒜等挂在厨房里,让烟熏而不烂的启示下,运用到贮藏红苕上的。经我们初步分析,由于厨房的温度较其他房内高,加之烟中含有一氧化碳和烟尘等,对红苕有一些杀菌和保护作用。烟熏苕种的具体做法
