对几种水稻籽粒中的脂肪及脂肪酸组分的分析表明,糙米的脂肪含量为2.96~3.33%。其中,淀粉脂为0.39~0.97%,非淀粉脂为2.09~2.94%。糯稻的淀粉脂少于非糯品种,非糯品种中直链淀粉含量高的品种具有更多的淀粉脂.糙米的淀粉脂和非淀粉脂主要由棕榈酸、油酸和亚油酸所构成.非淀粉脂中棕榈酸含量低于淀粉脂,而油酸的含量则高于淀粉脂,糯稻品种淀粉脂中的棕榈酸含量高于非糯性品种。
Analysis of fat and fatty acid components in several rice grains showed that brown rice had a fat content of 2.96-3.33%. Among them, the starch fat 0.39 ~ 0.97%, non-starch fat 2.09 ~ 2.94%. Glutinous rice had less amylose than non-waxy varieties, and non-waxy varieties had more amylose than non-waxy varieties.The starch and non-starch fat of brown rice were mainly composed of palmitic acid, oleic acid and linoleic acid. The content of palmitic acid in non-starch fat was lower than that of starch fat, while the content of oleic acid was higher than that of starch fat. The content of palmitic acid in starch fat of glutinous rice was higher than non-waxy.
