崧,即大白菜,人们称之为百菜之王,很大程度上是因其口感甚好。《南齐书》有一段记载非常有名。说南朝周颙于钟山筑隐舍,终日长蔬,颇以为适。人尝问:“卿山中何所食?”颙曰:“赤米,白盐,绿葵,紫蓼。”又问:“菜食何味最胜?”颙曰:“春初早韭,秋末晚菘。”霜降以后,白菜味道最为鲜美菜味道最为鲜美,故赞美其“秋末晚菘”。南宋诗人范成大也有诗云:“”拨雪挑来踏地菘,味如蜜藕更肥醲。“《本草纲目》解释道:”菘性凌冬晚凋,有松之操,故曰菘,俗谓白菜。“
