大豆、花生等所含的植物性蛋白质,在吾国民间是一种很重要的平民化营养品。这种蛋白质的价值和由动物取得的稍有遜色,但据美国纽约大学医学院A.A.Albane e博士最近报告,倘於植物性蛋白质内,以由氨与石油等原料制得的合成氨基酸補充后,则其营养价值即可与肉類与蛋類等动物性蛋白质相同。查植物性蛋白质内缺乏数种主要的氨基酸類,以致不能如动物性蛋白质之完全適合人体需要。这种重要的氨基酸類在合成品中可以获得,但合成品向来认为对人体有害,故雖可用以補充植物性蛋白质而兹未实行。直至最近有自告奋勇之人,願作此种试验,乃得证明人体具有抵抗合成氨基酸所生可能之病害,因其攝入人体之后,即能使其消化,甚或使之變为天然
