冬季胡萝卜、白萝卜大量上市,许多餐厅和家庭喜欢把胡萝卜和白萝卜切成块或丝做成红白相间,色香味俱全的小菜,不仅看起来美观,吃起来电爽口。其实,这种吃法不科学,胡萝卜和白萝卜根本不适合配调在一起。因为白萝卜的维生素C含量极高,对人体健康非常有益,但是一旦和胡萝卜混合就会使维生素C丧失殆尽。其原因是胡萝卜中含有一种叫抗坏血酸的解酵素,会破坏白萝卜中的维生素C。不仅如此,胡萝卜与所有含维生素C的蔬菜配合烹调都充当这种破坏者。除胡萝卜之外,还有胡瓜、南瓜等也含有类似胡萝卜的分解酵素。
