释菜礼是一种古老的祭祀名称,始见于三《礼》中。宋代时规定各级国立学校在四孟月举行,明洪武十七年(1384年)令每月朔望举行,清顺治元年(1644年)规定月朔及进士释褐时举行,各级学校文庙也都在每月初一举行。释菜因此成为文庙祭祀的专有名称之一,也是文庙仅次于释奠的祭祀典礼。由于人们一般只重视释奠而忽略释菜,有必要对释菜进行考察研究。
