目的对山葵保健酒化学成分进行了分析,为其开发利用提供理论依据。方法采用用气相色谱-质谱-计算机联用技术。结果从中分离鉴定出29个化合物,它们占总挥发性成分的83.43%,其主要成分为异硫氰基环丙烷(6.69%)、苯乙醇(10.43%)、丁二酸二乙酯(8.12%)、辛酸乙酯(5.77%)、十六酸乙酯(6.63%)、(Z,Z,Z)-9,12,15-十八烷三烯酸乙酯(4.15%)、2,2’-亚甲基双-(1,1-二甲基乙基)-4-甲基苯酚(10.05%)等。结论这些主要成分或许就是山葵保健酒能起到保健作用的活性成分。该研究为山葵保健酒的保健作用提供了一定的化学依据。
Objective To analyze the chemical composition of Wasabi health wine and provide a theoretical basis for its development and utilization. Methods using gas chromatography - mass spectrometry - computer combined technology. As a result, 29 compounds were isolated and identified, accounting for 83.43% of the total volatile components. The main components were isothiocyanocyclopropane (6.69%), phenethyl alcohol (10.43%), diethyl succinate (8.12% ), Ethyl octanoate (5.77%), ethyl hexadecanoate (6.63%), (Z, Z, Z) -9,12,15-octadecyltrienoic acid ethyl ester ’-methylenebis- (1,1-dimethylethyl) -4-methylphenol (10.05%) and the like. Conclusion These main ingredients may be the active ingredients that Mountaineer health drinks have a health-promoting effect. The study provided a certain chemical basis for the health effects of horseradish health wine.
