目的:了解海北州各类食品食源性致病菌污染状况,为控制和降低食源性疾病提供依据。方法:按照《2014年青海省食品安全风险监测方案》要求抽取食品种类有特殊膳食用食品,肉与肉制品,水产与其制品,饮用水,调味品,加工坚果与籽类,餐饮食品共计七大类180件。监测有沙门氏菌,单增李斯特氏菌,金黄色葡萄球菌,蜡样芽孢杆菌,副溶血性弧菌,等共5种食源性致病菌和污染指示菌细菌总数,大肠菌群。结果:食源性致病菌总检出率10.0%,共检出3种致病菌:金黄色葡萄球菌,蜡样芽孢杆菌,单增李斯特氏菌,受污染的食物以冷冻肉糜制品为主。结论:海北州食源性致病菌和污染指标菌细菌总数,大肠菌群污染不容乐观,对食品加工生产和销售的各个环节,相应部门应加强监管。
Objective: To understand the contamination status of food-borne pathogenic bacteria in all kinds of food in Haibei state and provide the basis for controlling and reducing food-borne diseases. Methods: According to “2014 Qinghai Province food safety risk monitoring program” requires the extraction of food types are special dietary foods, meat and meat products, aquatic products and their products, drinking water, condiments, processed nuts and seeds, food and beverage total of seven Class 180 pieces. Surveillance Salmonella, Listeria monocytogenes, Staphylococcus aureus, Bacillus cereus, Vibrio parahaemolyticus, and a total of five kinds of food-borne pathogens and indicators of bacterial contamination, coliform bacteria. Results: The total detectable rate of food-borne pathogens was 10.0%. Three kinds of pathogenic bacteria were detected: Staphylococcus aureus, Bacillus cereus, Listeria monocytogenes and contaminated food with frozen meat products the Lord. Conclusion: The total bacteria and contaminant index of food-borne pathogenic bacteria and pollution in Haibei prefecture are not optimistic for the contamination of coliform bacteria. The corresponding departments should strengthen supervision in all aspects of food processing, production and sales.
