目的了解湛江市出口虾中微生物污染状况,并为该类产品监管提供参考依据。方法采用GB 4789系列微生物检验方法,检测待出口虾中菌落总数、大肠菌群、大肠埃希菌、金黄色葡萄球菌、沙门菌、单核细胞增生李斯特菌、副溶血性弧菌及霍乱弧菌,并结合相应的限量标准对检验结果进行分析。结果共检验8 406份虾产品,菌落总数超标率为0.66%;大肠菌群超标率为1.44%;未检出大肠埃希菌;金黄色葡萄球菌、沙门菌、单核细胞增生李斯特菌、副溶血性弧菌和霍乱弧菌的检出率分别为0.29%、0.11%、0.43%、3.28%和2.00%。结论湛江市出口虾中存在不同程度的微生物污染,致病性弧菌的污染尤为严重,应该引起重视。
Objective To understand the status of microbial contamination in shrimp exports in Zhanjiang and to provide a reference for the regulation of such products. Methods The method of GB 4789 microbial test was used to detect the total number of colonies to be exported, coliforms, Escherichia coli, Staphylococcus aureus, Salmonella, Listeria monocytogenes, Vibrio parahaemolyticus and cholera Bacteria, and combined with the corresponding limit of the test results for analysis. Results A total of 8 406 shrimp products were tested. The over-standard rate of total colony was 0.66%. The over-standard rate of coliform bacteria was 1.44%. No Escherichia coli, Staphylococcus aureus, Salmonella, Listeria monocytogenes, The detection rates of V. parahaemolyticus and V. cholerae were 0.29%, 0.11%, 0.43%, 3.28% and 2.00%, respectively. Conclusion There are different levels of microbial contamination in shrimp exports in Zhanjiang City. The pathogenic Vibrio pollution is particularly serious and should be taken seriously.
