南瓜是夏季人们最喜爱的重要蔬菜之一,不仅清香可口,还是保健的佳品。明朝的《饮食须知》中已有南瓜味甘、性温。人脾气的记载,故有“热天半块瓜,中药不要抓”的谚语。 现代营养学研究表明,南瓜含有30多种营养元素含较高的蛋白质,富含果胶质、瓜氨酸、胡萝卜素、精胺酸、天门冬素、葫芦巴碱、纤维素、维生素(如A、B、C、E)及钙、钠、钾等矿物元素等,几乎不含脂肪,药理学研究证明,南瓜对糖尿病、高血压病、肥胖症以及肝脏和肾症病变有惊人的疗效。最近研究和临床实验证明,南瓜还能够消除致癌物质--亚硝胺的致突变作用。
