5′-核苷酸二钠为一种食物增味剂,由5′-肌苷酸盐和5-鸟苷酸盐混合组成,与味精(谷氨酸钠)合用可改善各种食品的滋味。以往曾有作者以1克/公斤的5′-核苷酸二钠喂养大鼠二年未呈现任何显著毒性作用。一次给药剂量高达10克/公斤,在大鼠与小鼠中亦未有任何不良作用(但两倍于此剂量即引起动物死亡)。另有作者对孕期的大小鼠或猴的整个器官形成期间给予5′-核苷酸二钠亦未发现有致胎盘
Disodium 5’-nucleoside is a food flavor enhancer consisting of a mixture of 5’-inosinate and 5-guanylate, which in combination with monosodium glutamate improves the taste of various foods .
