春天是吃野菜的好时节。清明前后,郊外的各种野菜开始冒头儿,对于许多外出踏青的人来说,采摘野菜是一件乐事。其实,吃野菜不仅仅是换个口味,还可以起到很好的保健作用,有的野菜甚至还有防癌功效。然而天然野菜虽然可口,但是采摘和食用野菜都是有讲究的。应时采摘野菜关键在于鲜嫩,过老过硬的植物就不能算野菜了。因此,要保证野菜鲜嫩爽口,必须对野菜的生长周期以及食用部位有深入了解。一般来说,每年的3月至4月,是采摘野菜的黄金季
