目的了解生食水产品卫生质量,做好餐饮服务食品安全监管工作。方法以无菌方式在餐饮服务单位采集生食水产品76份,按相关国家标准进行理化和微生物检测,并按国标进行评价。结果生食水产品的合格率为82.89%,产品不合格原因是大肠菌群、菌落总数超标,与生食水产品的种类无关,与季节有关,第三季度的合格率最低。结论为提高生食水产品的卫生质量,建议严把许可关;加强对从业人员培训;加强对消费者的宣传教育,尽量少食或不食生食水产品。
Objective To understand the hygienic quality of raw aquatic products and to improve the food safety supervision of catering services. Methods 76 samples of raw aquatic products were collected aseptically in catering service units. Physical, chemical and microbiological tests were conducted according to relevant national standards and evaluated according to national standard. Results The passing rate of raw aquatic products was 82.89%. The cause of unqualified products was coliform bacteria. The total number of colonies exceeded the standard, which was not related to the type of raw aquatic products. The yield was the lowest in the third quarter. Conclusion In order to improve the hygiene quality of raw aquatic products, it is suggested that the clearance should be strictly controlled; the training of practitioners should be strengthened; the publicity and education to consumers should be strengthened to minimize or not eat raw aquatic products.
