荞麦属蓼科双子叶植物,过去农村就有采食荞麦嫩苗的饮食习惯。近年来随着人民生活水平的提高,对蔬菜品种多样化的需求,荞麦苗作为芽菜生产中的一个新品种,已经被开发生产上市。荞麦苗富含芦丁,对人体血管有扩张及强化作用,因而荞麦苗对高血压和心血管病患者是一种保健食品。荞麦苗的食用方法很多,可以凉拌、爆炒,也可以作汤,味道清香,略带苦味。荞麦苗的生产方法与豌豆苗大同小异,现简述如下:
