1999年夏秋之交的一天,我冲着“吃正宗粤菜到上海明宫”这句广告语,来到了坐落在浦东崂山东路与潍坊路交界处的上海明宫酒楼。然而,我此行的目的不是为了解馋尝鲜品粤菜,而是登门造访国家级高级烹饪技师、粤菜大师姜介福先生。曾任上海新雅粤菜馆副总经理、总厨师长的姜先生,今年六月退休后被明宫酒楼相中“挖去”,出任总厨师长。
One day at the turn of summer and fall of 1999, I went to Shanghai Ming Palace Restaurant, located at the junction of Laoshan East Road and Weifang Road in Pudong, with the slogan “Eat Authentic Cantonese to Shanghai Ming Palace.” However, my purpose of this trip is not to understand the taste of fresh Cantonese food, but to visit the country-level senior culinary technician, Cantonese master Mr. Jiang Jufu. Former Shanghai Xinya Cantonese Restaurant Deputy General Manager, Head Chef of Mr. Jiang, after retiring in June this year, Ming Palace restaurant phase “dig”, as head chef.
