目的建立油脂中过氧化值的分光光度测定方法。方法在无水酸性条件下,油脂中的过氧化物使I-定量的氧化成I2,I2与I-结合生成易溶于水的I3-,利用I3-的颜色与标准碘液进行比较定量。结果该方法牟精密度与准确度试验结果其变异系数为1.53%~6.19%;回收率为86%~108%。分光光度法测定油脂中的过氧化值与国家标准检验方法比较差异无统计学意义(t=0.11,P>0.05)。结论方法简单易行,准确可靠,灵敏度高,适合于基层大批量样品的检测分析。
Objective To establish a spectrophotometric method for the determination of peroxide value in oils and fats. Methods Under anhydrous acidic conditions, the peroxide in the oil oxidized I- quantitatively to I2, which was combined with I- to form water-soluble I3-. The color of I3- was compared with that of standard iodine solution. Results The results showed that the coefficient of variation (CV) was 1.53% ~ 6.19% and the recovery rate was 86% ~ 108%. Spectrophotometric determination of lipid peroxidation value and the national standard test method was no significant difference (t = 0.11, P> 0.05). Conclusion The method is simple, accurate, reliable and sensitive. It is suitable for the detection and analysis of large quantities of samples in grass roots.
