为了解掌握我省集市贸易市场食品卫生状况,做好食品卫生监督工作,确保人民群众饮食安全,我们于1989年4~5月,对全省65个市、县、区集市贸易市场(以下简称集贸市场)的食品卫生状况进行了调查,现将结果报告分析如下。一、调查方法与内容调查采取抽查的方法,调查人员认真填写“调查表”,然后统一汇总分析。调查内容分三类,一是环境卫生和一般设施卫生,包括:集贸市场内外环境卫生,容器、台案卫生,四防设施,是否分类设摊及建立封闭式售货摊床;二是食品卫生,包括:“三证”(营业执照、卫生许可证、健康证)是否齐全,食具消毒设施及食具消毒情况,从业人员卫生习惯及卫生知识,有无禁售食品等;三是肉品检疫,包括:有无检疫人
