[目的]了解泉州市集中式餐(饮)具消毒服务机构餐(饮)具消毒效果现况,以便采取相应的改进措施,并为卫生监督检查提供科学依据。[方法]2009年对全市22家集中式餐(饮)具消毒服务机构所消毒餐(饮)具进行随机采样,检测大肠菌群污染状况及烷基(苯)磺酸钠残留量。[结果]共监测440份餐(饮)具,其中220份样品检测大肠菌群,220份样品检测烷基(苯)磺酸钠残留量。大肠菌群总不合格率为20.5%,其中骨碟为15.9%、碗为20.5%、杯子为22.7%、味碟为21.1%、汤匙为24.0%、筷子为20.5%;烷基(苯)磺酸钠合格率为100%。[结论]泉州市集中式餐(饮)具消毒服务机构的消毒质量还存在许多不足,应加大卫生监管力度。
[Objective] To understand the current situation of the disinfection effect of meal (drink) in Quanzhou centralized food and drink service facilities in order to take corresponding improvement measures and provide scientific basis for health supervision and inspection. [Method] In 2009, 22 disinfected meals (drinking) equipments with centralized disinfection service agencies in the city were randomly sampled to detect the coliform pollution status and the residue of alkyl benzene sulfonate. [Result] A total of 440 food and drink items were monitored. Among them, 220 samples were tested for coliform bacteria and 220 samples were used for the determination of sodium alkyl benzene sulfonate residues. The total failure rate of coliform bacteria was 20.5%, of which 15.9% were for bone plates, 20.5% for bowls, 22.7% for cups, 21.1% for savory dishes, 24.0% for spoon and 20.5% for chopsticks; Sodium pass rate of 100%. [Conclusion] There are still many deficiencies in the disinfection quality of centralized food (drinking) disinfection service agencies in Quanzhou. Health supervision should be strengthened.
