目的了解广州市超级市场散装直接入口食品的卫生质量,为加强食品卫生工作管理、保障消费者身体健康提供依据。方法对2005-2007年广州市内4间大中型连锁超级市场属下的生产经营单位制售的糕点类、油炸类、烧烤类、酱卤类、凉拌类、饮料类等6类散装直接入口食品的监测结果进行分析,检验方法和卫生评价依据国家相关的卫生标准进行。结果2005-2007年6类食品的总合格率分别为82.39%、85.07%和94.74%,差异有统计学意义(P<0.01);超市本部制售的食品合格率均高于外租户制售的同类食品,其中凉拌类和糕点类与之差异有统计学意义(P<0.05)。结论2005-2007年散装直接入口食品卫生质量在逐年提高,但仍不稳定,有关行政职能部门须加大监管力度;在超市本部现场制售该类食品较之外租户制售的同类食品为安全,提示推行在超市本部现场制作销售散装直接入口食品应是今后超市发展的方向。
Objective To understand the sanitary quality of Guangzhou imported direct food in bulk and provide the basis for strengthening the management of food hygiene and ensuring the health of consumers. Methods Six types of bulk direct importers of cakes, frying, roasting, sauce, halogen, cold drinks and beverages were manufactured and sold in the production and operation units of four large and medium-sized chain supermarkets in Guangzhou from 2005 to 2007 Food monitoring results were analyzed, test methods and health evaluation based on national health standards. Results The total passing rate of the six categories of foods from 2005 to 2007 were 82.39%, 85.07% and 94.74%, respectively, with significant difference (P <0.01). The passing rate of foodstuffs sold and sold by the supermarket department was higher than those of the tenants The same type of food, including cold type and pastry with the difference was statistically significant (P <0.05). Conclusion The quality of foodstuffs imported from bulk direct import is increasing year by year from 2005 to 2007, but it is still not stable. The relevant administrative departments should intensify the supervision and control. The production and sale of such foods on the spot in Supermarkets’ , Suggesting that the implementation of the site in the supermarket production and sale of bulk direct imported food should be the future direction of the development of supermarkets.
