  Paella is a Valencian rice dish.Many people view paella as Spain’s national dish.
  Types of paella include Valencian paella, vegetarianpaella, seafood paella, and mixed paella , but there are many others as well. Valencian paella is believed to be the original kind and consists of white rice, green beans, meat (chicken and rabbit), white beans, snails, and seasoning. Seafood paella replaces meat with seafood and has no beans or green vegetables. Mixed paella is a free-style combination of meat from land animals, seafood, vegetables, and sometimes beans. All types of paella use olive oil.
  Paella is a Valencian word from the old French word paelle for pan, which in turn comes from the Latin word patella for pan as well.
  According to tradition in Valencia, paella is cooked over an open fire. Some people call for paella to be covered and left to settle for five or ten minutes after being cooked.
