二氧化碳是果蔬呼吸代谢的最终产物,在适宜的CO_2浓度下,不少水果可保持鲜嫩外观和良好风味及品质,商品腐烂损耗下降,因而在水果的贮藏和运输中得到广泛的应用,是气调贮藏技术取得良好效果的重要原因之一。CO_2的应用方法基本上可分二大类:1.以高浓度CO_2作水果采后短期处理;2.在适宜的CO_2浓度下,对水果进行长期贮藏。但是,无论哪一种方法,在具体应用时,都存在着临界浓度或临界处理时间问题。一旦超过界限,就会导致水果伤害,使商品受到损失。
