[目的]了解我市厂矿企业集体食堂食(饮)具卫生状况及消毒效果,提高消毒合格率。[方法]以大肠菌群纸片法作为判定依据,按GB 14934-94《食(饮)具消毒卫生标准》进行采样、检验和评价。[结果]2001年最低,2007年度最高,1季度合格率高于其他季度,蒸气消毒效果好于其他消毒方法,非承包经营食堂食(饮)具消毒合格率高于承包经营食堂。不同年份、不同季度、不同消毒方法、不同经营方式食(饮)具消毒合格率差异均有统计学意义(P<0.01)。[结论]我市企业食堂食(饮)具消毒合格率较低,影响食(饮)具消毒效果的因素是多方面的,食(饮)具消毒工作是一项长期的任务,应加强对该项工作的监督管理。
[Objective] To understand the hygienic condition and disinfection effect of the collective canteen food and drink in our factory, and to improve the pass rate of disinfection. [Method] Taking coliform bacteria paper method as the judgment basis, according to GB 14934-94 “food (drinking) with disinfection health standards” for sampling, testing and evaluation. [Result] The lowest in 2001, the highest in 2007 and the highest pass rate in the first quarter were higher than those in the other quarters. The steam disinfection effect was better than other disinfection methods. The pass rate of non-contracted canteen food (drink) was higher than that of contracted canteen. There were significant differences in passing rate of food (drink) in different years, different quarters, different methods of disinfection and different modes of operation (P <0.01). [Conclusion] The qualified rate of disinfection of food and drink in the canteens in our city is relatively low. There are many factors affecting the disinfection effect of food and drink. The disinfection of food and drink is a long-term task and should be strengthened The supervision and management of this work.
