对不同时期毛竹笋的营养物质含量分析表明:蛋白质、氨基酸、脂肪、糖类等的含量是未出土生长的冬笋高于出土生长的春笋;水分、纤维素含量是冬笋期较为稳定,春笋期逐渐增长;矿质营养元素含量是春笋高于冬笋。从毛竹笋营养含量及产量考虑,宜在2月中旬到3月中旬采收冬笋;在3月下旬到4月上旬采收春笋较为理想。 The results showed that the contents of protein, amino acid, fat, sugar and other bamboo shoots were higher than that of unearthed bamboo shoots. The contents of water and cellulose were stable during the winter bamboo shoots and gradually increased during the bamboo shoots Growth; mineral nutrient element content is higher than winter bamboo shoots. From the bamboo shoots nutritional content and yield considerations, should be in mid-February to mid-March harvest winter bamboo shoots; in late March to early April early spring bamboo shoot is ideal.
