目的了解剑阁县学校食堂餐具消毒状况及消毒效果。方法对剑阁县98所学校食堂餐具随机抽样监测,采用大肠菌群快速检测纸片法检测大肠菌群。大肠菌群阴性为餐具消毒合格,大肠菌群阳性为餐具消毒不合格。结果监测学校食堂98家,完全合格31家。监测餐具样品1420份,合格725份,合格率51.06%。结论剑阁县学校食堂餐具消毒合格率偏低,存在食源性疾病发生的安全隐患。对餐具消毒工作认识不到位、制度不落实、消毒方法不正确、保洁设施不完善等是造成餐具消毒合格率偏低的主要因素。相关部门应采取有效措施,以确保学校师生就餐安全。
Objective To understand the school canteen tableware disinfection status and disinfection effect. Methods Nineteen school canteens in Jiange County were randomly sampled and monitored. Coliform bacteria were detected by the rapid detection of coliforms. Coliform negative for tableware disinfection, coliform positive for tableware disinfection failed. Results Monitoring school canteen 98, fully qualified 31. Monitoring 1420 dishes samples, 725 qualified, with a pass rate of 51.06%. Conclusions Jiange school canteen tableware disinfection pass rate is low, there is a safety hazard of foodborne diseases. Dishware disinfection work is not in place, the system is not implemented, the disinfection method is not correct, inadequate cleaning facilities, etc. are the main factors that lead to the tableware disinfection pass rate is low. Relevant departments should take effective measures to ensure that school teachers and students dining safety.
