测定了两个耐藏性不同的蕃茄品种的果实(绿熟期采收),在贮藏过程中,果肉中超氧化物歧化酶(SOD)、过氧化物酶(POD)、抗坏血酸氧化酶(AAO)的活性及抗坏血酸(AA)和过氧化氢(H_2O_2)含量的变化。结果表明:在贮藏过程中,H_2O_2含量及POD、AAO活性都有一峰值出现,而SOD活性及AA含量则不断下降;除AAO外,其他几种酶活性及物质的变化均存在着差异,其中SOD活性及含量AA可以考虑作为对蕃茄品种耐藏性进行间接鉴定的生化指标。
Two fruits of tomato varieties with different storability were measured during the ripening period. During storage, superoxide dismutase (SOD), peroxidase (POD), ascorbate oxidase (AAO) Activity and the content of ascorbic acid (AA) and hydrogen peroxide (H_2O_2). The results showed that both H 2 O 2 content, POD and AAO activities peaked while the activities of SOD and AA decreased during storage. There were also differences in the activity and substance changes of several enzymes except for AAO, among which SOD Activity and content of AA can be considered as a biochemical index of tomato varieties for indirect identification of storability.
