以金铁锁红色愈伤组织为材料,用1%盐酸-甲醇提取花色苷,研究其在不同温度、光照、pH、可溶性糖、还原剂、氧化剂、防腐剂和金属离子等条件下的稳定性。实验结果表明,金铁锁花色苷在温度为4~60℃及偏酸性条件下较稳定;光照对花色苷具有较强的破坏作用,应避光存放;氧化剂和抗坏血酸对其影响较大,但在还原剂作用下较稳定。此外可溶性糖及防腐剂对愈伤组织有一定的增色作用;K+、Zn~(2+)、Mn~(2+)、Mg~(2+)、Ca~(2+)的存在对其稳定性没有较大影响,但Cu~(2+)、Fe3+对其有明显的破坏作用,因此在储存愈伤组织或花色苷时应避免使用铜器和铁器。
Anthocyanin was extracted with 1% hydrochloric acid-methanol and the stability of red anthocyanins was studied under different temperature, light, pH, soluble sugar, reducing agent, oxidant, preservative and metal ions.
