目的为全国膳食营养调查提供肉类、禽蛋产品中胆固醇的含量。方法试样经加热冷凝回流、皂化、石油醚和乙醚混合液萃取、浓缩、定容后,用高效液相色谱法测定。结果畜禽肉、内脏中胆固醇含量为0.151~1.870 g/kg,禽蛋中胆固醇为1.18~2.38 g/kg。结论膳食营养调查肉蛋产品中胆固醇含量的检测采集能不断充实、更新现有膳食营养数据库,为深入开展科学研究提供数据支持,研究成果对于调整居民膳食结构、指导合理饮食有重大现实意义。
Purpose To provide meat, egg product cholesterol content in a nationwide dietary nutrition survey. Methods The samples were heated, refluxed, saponified, extracted with a mixture of petroleum ether and diethyl ether, concentrated, and determined by high performance liquid chromatography. Results The contents of cholesterol in internal organs were 0.151-1.870 g / kg for poultry meat and 1.18-2.38 g / kg for cholesterol in eggs. Conclusion Dietary Nutrition Survey The detection and collection of cholesterol content in meat and egg products can continuously enrich and update the existing dietary nutrition database to provide data support for further scientific research. The research results are of great practical significance for adjusting residents’ dietary structure and guiding rational diet.
