目的了解目前北京市朝阳区商业区各类别餐饮服务单位在食品安全管理、场所设施、生产经营等方面的现状,分析北京市朝阳区餐饮服务单位目前存在的主要问题及这些问题存在的原因。方法将研究区域内所有餐饮单位作为研究对象进行整群抽样,共抽取1027户餐饮单位最近一次量化评分表共计1027份。对不同类型餐饮服务单位评分情况用单因素方差分析(one-way ANOVA)进行统计分析,使用卡方检验对不同检查内容合格率情况进行分析。结果①不同类别餐饮单位之间评分分布差异有统计学意义(P<0.01);②8个检查项目的得分差异均有统计学意义(P<0.05);③不同类别餐饮单位之间,在食品安全制度建立等21个检查内容在合格率差异上有统计学意义(P<0.05)。结论北京市朝阳区商业区餐饮单位总体量化等级以良好为主,应重点对中小餐饮单位的制度建立与执行、设备设施、采购贮存、添加剂管理等工作加强监督管理。
Objective To understand the status quo of various types of catering service units in the commercial area of Chaoyang District in Beijing at present on aspects of food safety management, facilities and production and operation, and to analyze the main existing problems of catering service units in Chaoyang District, Beijing and the reasons for these problems. Methods All the catering units in the study area were sampled by cluster sampling. A total of 1027 questionnaires were drawn from 1,027 food and beverage units. The scores of different types of catering service units were analyzed by one-way ANOVA and the pass rates of different examination contents were analyzed by using the chi-square test. Results ① There were significant differences in the distribution of scores between different types of catering establishments (P <0.01); ② There were significant differences in scores among the 8 items (P <0.05); ③ Among different types of catering establishments, The establishment of the system and other 21 examinations in the pass rate differences were statistically significant (P <0.05). Conclusion The overall quantification level of catering units in the commercial district of Chaoyang District in Beijing is good, and the establishment and implementation of the system of small and medium-sized catering units should be emphatically emphasized, and the supervision and management of equipment and facilities, purchasing and storage, and additives management should be strengthened.
