以椰子种皮为原料,测定了其基本成分和多糖提取液的抗氧化活性。结果表明,干燥后椰子种皮中粗纤维和可溶性糖的含量分别为17.69%和9.02%,经脱脂和超声波辅助提取所得提取液中多糖含量为1280.37μg/mL;该提取液对的抗氧化能力与其浓度呈剂量效应,原液对DPPH·自由基和羟自由基的清除率分别为67.15%和77.35%;对Fe~(3+)的还原能力(0.99)也高于100μg/mL的Vc(0.79),是一种潜在的抗氧化资源。
