有些地区人们以豆油为主要食用油。据专家研究结果显示,长期食用豆油应注意适量补硒。这是因为豆油是氧化负荷剂。它能抑制含硒的甘胱谷肽过氧化酶和脱单碘酶活性。一方面使细胞膜抗过氧化系统的防御机制下降,并致能量代谢过程紊乱;另一方面长期食用豆油,造成血清硒和红细胞硒含量下降,是硒吸收利用受阻的结果。 在体内硒是一种水溶性抗氧化剂,能与蛋白质结合,保护体内细胞膜的抗过氧化损伤机制和促进能量代谢的氧化磷酸化过程。因而长期食用豆油阻碍硒的吸收及降低含硒酶的活力后,机体便可能出现潜在的缺硒状态。
People in some areas take soybean oil as the main edible oil. According to expert research results show that long-term consumption of soybean oil should pay attention to appropriate amount of selenium. This is because soybean oil is an oxidative load. It inhibits selenium-containing glutathione peroxidase and de-monoiodinase activity. On the other hand, long-term consumption of soybean oil, resulting in decreased selenium levels of serum selenium and red blood cells, is the result of obstruction of selenium absorption and utilization. Selenium is a water-soluble antioxidant in the body that binds to proteins, protects against the cell membrane anti-oxidative damage mechanisms and promotes oxidative phosphorylation of energy metabolism. Therefore, long-term consumption of soybean oil obstruct the absorption of selenium and reduce the vitality of selenium-containing enzymes, the body may be potential lack of selenium status.
