[目的]通过调查和实验室检测,分析食物中毒的原因,为预防类似的食物中毒事件提供科学依据。[方法]通过流行病学调查,同时采集病人肛拭子和剩余食品样品共9份,按GB/T4789-2003《食品卫生微生物学检验》和GB14938-94《食物中毒诊断标准及技术处理总则》操作,血清学分型采用“血平板搭桥法”进行诱导鉴定。[结果]在2份肛拭子和2份食品中分离到4株可疑菌,经ATB生化试验和血清学分型鉴定为韦太夫雷登沙门菌;同时对菌株进行核酸脉冲场凝胶电泳技术(PFGE)分型,图谱显示带形相同,提示菌株100%同源。[结论]本次食物中毒事件是流动摊档出售被韦太夫雷登沙门菌污染的“水果刨冰”而引起的。
[Objective] Through investigation and laboratory tests, the causes of food poisoning were analyzed to provide scientific basis for preventing similar food poisoning incidents. [Method] Through epidemiological investigation, 9 samples of rectal swab and remaining food were collected at the same time. According to GB / T4789-2003 “Microbiological examination of food hygiene” and GB14938-94 “Diagnostic criteria and technical treatment of food poisoning” Operation, serological typing using “blood plate bypass method ” for induction identification. [Results] Four suspicious strains were isolated from 2 rectal swabs and 2 food samples and identified as Salmonella typhimurium by ATB biochemical assay and serological typing. At the same time, the strains were subjected to nucleic acid pulsed-field gel electrophoresis ( PFGE) typing, the same bands showed the same pattern, suggesting that 100% homologous strains. [Conclusion] The food poisoning incident was caused by the sale of “fruit shaved ice” contaminated by Salmonella W. Weber in mobile stalls.
