目的了解乌鲁木齐市餐饮业餐具消毒状况,为加强食品卫生监督管理,进一步规范饮食单位卫生监督管理提供科学依据。方法采用大肠菌群快速纸片法,依据《食(饮)具消毒卫生标准》GB14934-1994进行采样、检测、评价。结果 2010年共抽检乌鲁木齐市各类型餐饮单位及消毒公司608家,餐具消毒合格率为65.8%。各类型餐饮单位及消毒公司的餐具消毒质量之间,差异有统计学意义(χ~214.506,P<0.01)。结论进一步加强餐饮业的卫生监督管理,提高从业人员的卫生意识,以保障公民的饮食卫生安全。
Objective To understand the status of tableware disinfection in the catering industry in Urumqi and provide scientific basis for strengthening the supervision and management of food hygiene and further regulating the hygiene supervision and management of catering units. Methods Coliform bacteria fast paper method, according to “food (drinking) with disinfection health standards” GB14934-1994 sampling, testing and evaluation. Results In 2010, a total of 608 units of various types of catering units and disinfection companies in Urumqi were spot checked. The pass rate of tableware disinfection was 65.8%. There was a significant difference between the quality of tableware disinfection of various types of catering units and disinfection companies (χ ~ 214.506, P <0.01). Conclusion To further strengthen the health supervision and management in the catering industry and improve the health awareness of employees so as to ensure citizens’ health and safety of their diet.
